The finest solid white-meat Albacore tuna available! Our original albacore tuna is seasoned with salt. Our dolphin-free tuna is high in omega-3 oils, low in mercury and caught in a sustainable manner. We catch younger albacore individually on hooks and lures, and handle them very carefully to ensure freshness. Jig-caught albacore is a green light Best Choice on the Monterey Bay Aquarium's list of seafood recommended to eat in order to save the oceans.
Our albacore are younger fish caught one at a time, near the surface of cold waters in the central and north Pacific. They are rich in Omega-3s (the fats said to be good for all sorts of ailments including arthritis), because they feed on krill. Each fish is landed and handled on a cushioned platform to prevent bruising, and its time on deck is carefully controlled. Each fish is rinsed, processed and put into the on-board blast freeze in 12 hours or less, since the texture ultimately depends on how fast it freezes. At the cannery, our albacore are thawed in the open air for about 16 hours. Next, the fish are filleted-anything bruised, discolored or bloody is eliminated. "If it ain't white, it ain't right," we like to say. The fillets are then cut into steaks and sealed into cans. The raw fish is cooked just once in a retort or pressure canner. This process, called cold-packed canning, is substantially different than the hot-packed canning methods used by Big Tuna.
